Preparation steps
1.
Wash, dry and chop the parsley, chervil, tarragon and chives
2.
Break the eggs into a bowl and lightly beat them. Season with salt and pepper and add the chopped herbs, mixing well.
3.
Heat half of oil in a very large frying pan then pour in half the egg mixture, cook until the edges of the omelette are done and then carefully turn it over and continue to cook for a further 2 -3–minutes until fully cooked.
4.
Slip the omelette onto a dish and keep warm. Repeat this process again, making 2 omelettes.
5.
Place the sliced ham over the omelettes and roll up tightly.
6.
Slice each omelette into three.
