1 onion (finely chopped)
1 handful Dill (choped)
1 handful Basil (choped)
8 eggs
¼ cup cream (35% fat)
salt
freshly ground Black pepper
5 ozs smoked Salmon (sliced)

Preparation steps

1.
Heat the butter in an omelette pan or frying pan and gently cook the onion until soft but not browned.
2.
Beat together the eggs, cream and herbs and season with salt and pepper.
3.
Pour the eggs over the onions and cook for 2-3 minutes until the base is golden brown. Carefully turn the omelette over and cook for a few minutes, until cooked to your liking.
4.
Cut into pieces and serve with the smoked salmon. Garnish with dill and sprinkle with salt and pepper to taste.
