4 Herbal tea
2 cups boiling water
2 cups sugar
green Food coloring (optional)

Preparation steps

1.
Soak the tea bags in the water for 20 minutes.
2.
Line a baking tin with non-stick baking paper.
3.
Put the sugar in a heavy-based pan and strain the tea into the pan. Heat slowly, stirring until the sugar has dissolved completely.
4.
Bring to a boil and cook without stirring for 20-30 minutes until a little mixture forms a hard crack when dropped into chilled water;150°C|300°F on a sugar thermometer. Remove from the heat and stir in the colouring if using.
5.
Pour into the tin and cut into strips, then into small pieces, when warm. Leave to set. Toss in icing sugar and store in an airtight container.
