4 cups lean Ground beef
2 Tbsps rosemary (finely chopped)

½ Eggplant (sliced)
Chives (trimmed of half their sprigs and soaked in water)

Preparation steps

1.
Heat the grill to hot.
2.
In a large mixing bowl, combine the beef mince and chopped rosemary thoroughly with seasoning.
3.
Make meatballs by rolling tablespoons of the mixture between your palms.
4.
Thread the meatballs onto the bare half of the rosemary stems. Thread the slices of aubergine in folds onto the rosemary sprigs.
5.
Season the aubergine and brush with the olive oil. Grill the meatballs for 10-12 minutes, turning occasionally.
6.
Half way through cooking, add the aubergine and grill for 6-8 minutes until cooked. Remove and serve together immediately.
