4 ½ cups lean Ground beef
2 shallots (finely sliced)
2 cloves garlic cloves (minced)
2 tsps ground Cumin
1 tsp ground cilantro
1 tsp dried oregano
1 Tarragon (finely chopped)

red Chard leaf
2 Chives (halved)

Suggested variation; replace the beef mince with lamb mince. Divide the mixture into 6 and roll into kebab shapes before sealing and cooking.

Preparation steps

1.
Combine the beef, shallot, garlic, ground spices, dried oregano, tarragon and seasoning in a large mixing bowl.

Mix together well using your hands until you have a homogenous mixture. Shape the beef into a loaf shape and coat in the oil.

Season the outside generously before heating a large frying pan over a moderate heat until hot. Seal the meat loaf in the oil until golden brown in colour all over.
4.
Transfer to a slow cooker and cover with a lid. Cook on a medium setting for 4-5 hours until the internal temperature of the meat loaf is at least 60°C | 140°F.
5.
Remove from the slow cooker when done and arrange on a napkin. Garnish with the chard, chive and chervil before serving.
