- 18 ozs Pork loin
- 1 tsp dried oregano
- 1 tsp dried thyme
- ½ tsp Red pepper flakes
- salt
- freshly ground peppers
- olive oil
- ½ Iceberg lettuce (or any leafy green)
- 3 Tomatoes
- 2 garlic cloves
- 6 ozs Greek yogurt
- 4 whole wheat wraps (or soft thin flatbread)
- onions (for garnish)

Preparation steps
1.
Rinse the meat, pat dry, trim and cut into thin strips. Toss with the herbs and red pepper flakes, season with salt and pepper and sear in a hot oil.
2.
Rinse the lettuce, trim, spin dry and cut into strips. Rinse the tomatoes, trim and cut into strips.
3.
Peel the garlic, mince, mix with the yogurt and season with salt and pepper.
4.
Toast the flatbread in a hot frying pan, remove from the heat and let cool to lukewarm. Spread the yogurt over the flatbread and top with lettuce, meat and tomatoes. Fold in half and serve with onion rings.
