1 tsp peppercorns
½ tsp Mustard seed
4 garlic cloves
2 Tbsps Canola oil
4 rosemary
3 thyme
2 Sage

Preparation steps

Preheat the oven to 160 ° C top and bottom heat Preheat.

Rinse and pat dry pork, trim of fat and tendons. Crush peppercorns with mustard seeds and two peeled and chopped garlic cloves finely. Coat meat with the mixture. Heat oil in a pan and sear meat all around for about 1-2 minutes. Remove from the pan. Crush remaining garlic with the knife. Rinse rosemary, thyme and sage and shake dry. Spread herbs on meat and tie with kitchen string. Top with garlic and arrange on a lined with parchment paper baking sheet. Roast in preheated oven at 160°C (approximately 325°F) for about 30 minutes.
