- For the shrimp salad
- 200 grams shrimp (cooked)
- 1 shallot
- 2 Tbsps Mayonnaise
- 2 Tbsps Double cream
- salt
- freshly ground peppers
- lemon juice
- For the herb waffles
- 3 eggs
- salt
- 2 Tbsps finely chopped Fresh herbs (such as dill and chives)
- 50 grams melted butter
- 100 grams Pastry flour
- 100 grams Herb quark
- vegetable oil (to grease waffle iron)
- finely chopped Dill (for garnish)

Preparation steps

Rinse shrimp and drain well. Peel shallot and chop very finely. Mix together mayonnaise, herbs and double cream. Season with salt, pepper and lemon juice. Stir in shallot and shrimp. Cover and chill.

For the waffles, separate eggs. Beat egg whites with pinch of salt until stiff peaks form. Beat egg yolks with butter until fluffy, then add quark. Sift flour and herbs over egg whites and fold in with a whisk. Gently fold egg white mixture into egg yolk mixture. Grease waffle iron with oil and fry 8 waffles until golden brown.
3.
To serve, top each waffle with shrimp salad. Sprinkle with dill for garnish.
