450 grams Pastry flour (Type 550)
½ cube Yeast 21 grams (about 1 ounce)
1 tsp sugar
1 tsp salt
1 egg
120 grams Yogurt (0.1% fat)
60 grams softened butter
4 Tbsps freshly chopped Fresh herbs (such parsley, chives, dill)
80 grams Sesame seeds

Preparation steps

Sift the flour into a bowl and make a well in the middle. Crumble in the yeast and sprinkle with sugar. Add 1-2 tablespoons of lukewarm water. Stir together, cover and let rest in a warm place about 15 minutes.

Add the salt, yogurt, butter, herbs and about 100 ml of lukewarm water (approximately 3 ounces) to the dough. Knead everything to a smooth, pliable dough, about 10 minutes. Cover and let rest for 45 minutes.

Roll out the dough and cut into 8-10 pieces. Knead each again and shape into rolls. Place on a parchment-lined baking sheet, cover with a cloth and let rest another 15 minutes.

Preheat the oven to 200°C (approximately 400°F). Brush the rolls with a little lukewarm water and sprinkle with sesame seeds. Bake on the middle rack 15-20 minutes until golden brown. Remove from oven and allow to cool. Serve to taste with butter.
