Preparation steps

1.
Put the beans and lentils into separate bowls, cover with water and soak overnight.
2.
Peel and finely dice the onion. Peel the carrots and the Hamburg parsley root and cut into 0.5-1 cm dice. Drop the tomato into boiling water for a few seconds, then skin, halve and deseed. Dice the flesh very finely.
3.
Put the beans into a pan with the onion and add the stock. Bring to the boil and cook with a lid on the pan for about 60 minutes. Add the lentils after 15 minutes.
4.
At the same time, heat the oil in a frying pan and sweat the prepared vegetables. Add the pearl barley and sweat briefly. Then add the clove and lovage. Add the vegetables to the bean pan 35 minutes before the end of cooking time. Add a little more water if necessary and simmer until everything is cooked.
5.
Season the soup with salt and pepper and add lemon juice to taste. Add herbs of your choice if your wish and serve.
