- ⅔ cup Barley
- ⅓ cup fatty Bacon (diced)
- 7 ozs smoked, cured Pork (without the bone, pre-cooked)
- 3 cups Beef broth
- 1 ⅔ cups Pumpkin
- 2 stalks Celery
- 1 onion
- 1 Leek
- salt
- freshly ground Black pepper
- Nutmeg
- Celery (to garnish)

Preparation steps

Wash the barley and drain well. Peel and finely chop the onion. Dice the bacon and fry in a skillet, without fat. Add the barley and the onions and sauté. Season with salt, pepper and nutmeg and pour in the beef broth. Bring to a boil, then simmer for 20 - 25 minutes. In the meantime, cut the pork into 1 inch (2 - 3 cm) cubes. Dice the pumpkin, wash the leek and cut into thin rings, wash the celery and cut into slices. Put the pork and the vegetables in the soup and cook until soft. Season the soup to taste, garnish with a few celery leaves and serve.
