- 2 Tbsps butter
- 6 ozs button Mushrooms (sliced)
- 2 Tbsps flour
- 1 ⅓ cups vegetable stock
- ⅜ cup plain Yogurt
- 1 pinch grated Nutmeg
- salt
- peppers
- 11 ozs white Asparagus (tips)
- 11 ozs sweet Corn (drained)
- 14 ozs canned White bean (drained)
- 16 ozs cooked Lobster meat
- To garnish
- chopped Chives

Preparation steps
1.
Heat the oven to 190°C (170° fan) 375°F gas 5.
2.
Heat the butter in a flameproof casserole dish and cook the mushrooms until golden.
3.
Stir in the remaining ingredients except for the lobster and heat until very hot.
4.
Cover and cook in the oven for 15-20 minutes until heated through.
5.
Put the lobster on top of the casserole and sprinkle with the chopped chives.
