1 large onion
2 green Bell pepper
3 stalks Celery
2 slices Bacon
300 grams mixed Ground meat
2 Tbsps Canola oil
2 Tbsps Tomato paste
300 grams pureed Tomatoes
700 milliliters Vegetable broth
3 Tbsps red bell pepper relish
salt
freshly ground peppers
1 pinch ground Cumin
4 Tbsps freshly chopped parsley
4 Tbsps freshly grated pecorino romano

Preparation steps

Peel onion, cut in half and cut into rings. Rinse bell pepper, trim and cut into strips. Rinse the celery, remove the strings and cut into slices. Cut the bacon into small cubes. Brown the ground meat with the bacon until crumbly in a large pot with oil. Add tomato paste, stir and cook for a few minutes. Add prepared vegetables, mix well and sauté 2-3 minutes. Then add pureed tomatoes and broth and simmer for about 10 minutes. Stir in the ajvar and season the soup with salt, pepper and cumin.

Divide among bowls and serve each sprinkled with 1 tablespoon parsley and 1 tablespoon Pecorino. Serve with baguette slices, if desired.
