2 Tbsps olive oil
4 small, skinless Chicken breasts (diced)
1 onion (sliced)
2 cloves garlic cloves (finely chopped)
4 sticks Celery (sliced)
2 large carrots (thinly sliced)
1 head Broccoli (prepared into small florets)
2 large vine Tomatoes (cored and cut into wedges)
salt
freshly ground Black pepper

Preparation steps

Cook the pasta in a large saucepan of salted, boiling water until 'al dente; ' 8 - 10 minutes.

Meanwhile, heat the oil in a large saute pan set over a medium heat until hot. Add the chicken and a pinch of seasoning, sautéing for 5 minutes.

Add the onion, garlic, celery, carrot, broccoli, and tomatoes, cooking for a further 6 - 7 minutes until tender.
4.
Drain the pasta when ready and add to the saute pan, tossing well. Season to taste with plenty of salt and pepper.
5.
Spoon into bowls and serve.
