1 kilogram cooked potatoes (day-old)

100 grams finely diced Bacon
1 egg
2 Tbsps milk
3 Tbsps clarified butter

Preparation steps

Peel potatoes, grate coarsely, season with salt and pepper and mix with bacon. Whisk egg with milk. Heat butter in a coated pan. Add potatoes, form into a patty with spatula, sprinkle with egg mixture and cover. Cook over very low heat for about 20 minutes or until crispy.

Carefully flip, using lid of pan or a plate for help, and briefly cook on other side until crispy on higher heat. Cut into pieces and serve hot.
