4 Hamburger bun
600 grams new potatoes
350 grams Ground turkey
1 egg
breadcrumbs
½ tsp ground paprika
1 tsp hot Mustard
1 tsp oregano (finely chopped)
1 small Eggplant
1 yellow Bell pepper
1 red Bell pepper
1 onion
1 garlic clove
olive oil
2 Tbsps Basil (chopped)
1 Tbsp Dill (chopped)
Sea salt
peppers (freshly ground)

Preparation steps

1.

Rinse the potatoes and cook under steam for about 20 minutes.

Mix the ground turkey with egg, paprika, mustard and oregano in a bowl. Mix in the breadcrumbs to form a well moldable mass. Season with sea salt and pepper. Divide the mixture in 4 portions and shape into patties. Brush each patty with a little oil and grill on each side for about 3-4 min.

Rinse the eggplant and cut into small dices.

Rinse the bell peppers, cut in half, remove the seeds and the rib and chop.

Peel the onion and garlic and chop finely.

Heat 2 tablespoons oil in a pan and saute the onion and garlic. Add in the bell peppers and eggplant and saute for about 3-4 min on low heat. Finally add in the basil and season with sea salt and pepper. All liquid should have evaporated by now.

6.

Cut the steamed potatoes in quarters and saute in 2 tablespoons hot olive oil. Toss with chopped dill and season with salt.

7.

Cut the burger buns into halves, put the turkey patty on bottom half and top with the sauteed vegetables. Put the top half of bun back on. Serve with the potatoes.
