- 6 slices Prosciutto
- 6 slices Sliced cheese (Emmentaler)
- 6 white Asparagus
- 12 green Asparagus
- salt
- freshly ground peppers
- 2 Tbsps lemon juice
- 80 grams Pastry flour
- 2 eggs
- 100 grams breadcrumbs
- clarified butter (to fry)
- 200 grams Quark
- 2 Tbsps Whipped cream
- salt
- freshly ground peppers
- 2 Tbsps lemon juice
- 3 Tbsps scallions
- Lettuce (for garnish)
Preparation steps

Peel asparagus, cut off ends and blanch in boiling salted water for about 5 minutes. Drain, rinse and cut into 10 cm (approximately 4 inch) long pieces. Season with salt and pepper.

Wrap 2 green asparagus and 1 white asparagus with cheese and ham. Secure. Whisk eggs in a deep dish. Place flour in a shallow dish. Place breadcrumbs in a shallow dish. Dip asparagus rolls first in flour, then in egg and finally in breadcrumbs. Cook in butter until golden yellow.

For the dip, stir quark, heavy cream, lemon juice and chives. Season with salt and pepper.

Arrange ham and asparagus rolls and lettuce on plates and serve with chive quark.
