- 6 cups small, waxy potatoes (quartered)
- 3 Tbsps olive oil
- 4 steak of gammon (approx. 140 g each)
- vegetable oil
- 1 Tbsp butter
- 1 Tbsp sugar
- 4 unwaxed Oranges (peeled, flesh chopped, juice retained)
- 1 tsp Corn starch

Preparation steps
1.
Heat the oven to 180°C (160°C in a fan oven), 350°F, gas 4.
2.
Mix the potatoes with the olive oil and arrange on a baking tray. Season with salt and ground black pepper and roast for around 45 min turning occasionally.
3.
Place the gammon steaks in a preheated griddle pan with some oil and griddle on both sides until golden. Remove from the pan and keep warm.

Drain the fat, add the butter and sugar to the pan and allow to caramelise. Quench with the orange juice. If necessary add a little water. Simmer for around 2 min, mix the cornflour with a little cold water and add to the pan along with the orange flesh.
5.
Arrange the potatoes and one gammon steak (halved) on each plate and serve drizzled with the orange sauce.
