800 grams turkey breasts
1 shallot
2 Tbsps freshly chopped Fresh herbs (such as rosemary and sage)
5 eggs
2 Tbsps Whipped cream
salt
freshly ground peppers
1 Tbsp butter
80 grams Turkey ham (in slices)
2 Tbsps vegetable oil
2 Tbsps medium hot Mustard

Preparation steps

Preheat oven to 180°C (approximately 350°F).

Rinse turkey breast and pat dry. Cut horizontally into a thin roll and pound flat with a meat tenderizer. Peel shallot and finely chop. Mix herbs and eggs and whisk in cream. Season with salt and pepper. In a pan, melt butter and sauté shallot until translucent. Add eggs to pan and cook and stir until eggs are scrambled. Remove eggs from pan and let cool slightly. Place ham slices over turkey breast. Spread scrambled egg evenly over ham. Tightly roll up and tie with kitchen twine. Season with salt and pepper. Heat oil in a pan and fry on all sides until brown. Place in a deep baking dish. Brush turkey roll with mustard and pour a little water into pan. Bake in preheated oven for about 80 minutes. Baste turkey roll with cooking liquid frequently during cooking time.

Before serving, remove kitchen string, Cut turkey roll into slices. Garnish with fresh herbs.
