For the ham and bean rolls
500 grams Green beans
salt
100 grams Smoked ham (thinly sliced)
2 Tbsps olive oil
coarse peppers
For the egg and herb sauce
2 hard-boiled eggs
1 onion
250 grams Yogurt (0.1% fat)
100 grams Mayonnaise
salt
peppers
500 grams mixed, finely chopped Fresh herbs (such as dill, parsley, chives, basil, chervil and lemon balm)

Preparation steps

1.

For the ham and bean rolls: Rinse, trim and cook green beans in salted boiling water, about 10 minutes. Drain, rinse with cold water and let drain again. Wrap small bundles of beans with ham slices.

Cut bread slices into thin strips and fry briefly in hot olive oil. Let cool. Place ham and bean rolls on bread strips and sprinkle with coarsely ground pepper.

3.

For the egg and herb sauce, finely chop eggs. Peel and dice onion. Mix eggs and onion with yogurt and mayonnaise and season with salt and pepper. Stir in herbs. Pour sauce over ham and bean rolls.
