Ingredients

For the tart
300 grams Puff pastry dough (frozen)
500 grams smoked Halibut
2 Tbsps lemon juice
freshly ground peppers
salt
125 milliliters Whipped cream
4 eggs
150 grams Crème fraiche
Nutmeg
For the basil sauce
2 bunches Basil
2 Tbsps lemon juice
1 pinch sugar
1 tsp Mustard
200 grams Yogurt (0.1% fat)
For garnishing

Preparation steps

For the tart: thaw puff pastry. Remove skin and bones from the fish. Drizzle fish with lemon juice and season with pepper and a little salt. Whisk cream with eggs and creme fraiche, season with nutmeg, salt and pepper. Rinse tart pan with cold water and leave wet.  Roll out pastry and line tart pan with it, making 2-3 cm edge all around (approximately 1 inch).

Arrange fish on the pastry and pour egg and cream mixture over fish. Bake in preheated oven at 200°C (approximately 400°F0 for about 45 minutes or until golden.

For the basil sauce: rinse and shake dry basil, pluck off leaves and combine with lemon juice, sugar, mustard, yogurt and season with salt and pepper. Puree.

Garnish tart with basil leaves and serve with basil sauce.
