300 grams Pastry flour
3 eggs
1 Tbsp olive oil

For the filling
50 grams raw ham
2 Tbsps butter
1 shallot
250 grams Ground meat
1 Tbsp breadcrumbs
2 Tbsps grated Parmesan
1 egg yolk

6 Tomatoes
1 shallot
4 Tbsps olive oil
1 pinch sugar

lemon juice
1 garlic clove
1 stem cilantro

Preparation steps

For the dough, mix the flour with eggs, oil and 1 teaspoon salt, and knead into a smooth, pliable dough. Add a little water or flour if necessary. Shape the dough into a ball, cover and let rest for about 30 minutes.

For the filling, Peel the shallot and chop, and saute in hot pan with butter. Add the diced ham and saute briefly. Transfer the ham and onion mixture to a bowl and mix with ground meat, breadcrumbs, Parmesan and egg yolk. Season with salt and pepper.

To make the ravioli, knead the dough again and divide into two portions. Roll out each portions on a lightly floured surface with a rolling pin. Place 1 tablespoon filling over one of the rolled dough at intervals of about 5-6 cm (approximately 2-2¼ inches) and cover with the remaining rolled dough.

Press the dough down around the filling and cut with a pastry cutter into square ravioli. Simmer the ravioli in boiling salted water for 4-5 minutes.

For the tomato sauce, blanch the tomatoes, drain, peel, quarter, core, and dice finely. Peel the shallot, chop finely and saute in a hot pan with 2 tablespoon oil. Add the tomatoes, cover the pan, simmer for 1-2 minutes, add sugar and lemon juice, and season with salt.

Saute the pressed garlic along with the cilantro leaves in a hot pan in the remaining oil and add the drained Ravioli; saute briefly. Served the ravioli over tomatoes sauce.
