- 3 cups Calamari (cleaned and diced)
- 2 Tbsps olive oil
- 1 clove garlic cloves (crushed)
- 1 red chili pepper (seeded and finely sliced)
- 1 Tbsp fresh rosemary (plus extra for garnish)
- 1 lemon (halved)
- 1 loaf Ciabatta
- 4 Tbsps Garlic Mayonnaise
- 4 leaves Boston butter lettuce
- 8 cherry Tomatoes (sliced)
- coarse salt (to taste)
- freshly ground Black pepper (to taste)

Preparation steps
1.
Rinse the squid under cold running water and blot dry with paper towels.
2.
Mix the squid in a bowl with the oil, garlic, chili, and rosemary. Allow to marinate for 15 minutes.
3.
Meanwhile, prepared the grill for direct grilling. Preheat to medium heat.
4.
Thread 2 squid pieces onto small bamboo skewers.
5.
Cut the ciabatta loaf in half horizontally and then vertically to make 4 pieces. Place on the prepared grill (watching carefully) and toast the bread until light golden brown.
6.
Spread about 1 tablespoon of mayonnaise on each piece of toast, top with lettuce leaves and sliced tomatoes.
7.
Season marinated squid with salt and pepper. Place on fish grate and cook the 1 to 2 minutes, turning half way through, or until lightly charred.
8.
Serve squid on top of the bruschetta garnished with fresh rosemary sprigs.
