- For the compote
- 1 red chili pepper
- 400 grams Apple
- 50 grams sugar
- ½ lemon (juice)
- 1 tsp grated ginger
- 50 milliliters dry white wine
- For the pork
- 1 Zucchini
- 250 grams carrots
- 200 grams Snow peas
- salt
- 4 Pork (ready for cooking, about 160 grams or 5.6 ounces)
- 3 Tbsps Hoisin sauce
- 1 Tbsp Corn oil
- freshly ground peppers
- 1 tsp chopped cilantro
- 1 tsp chopped mint

Preparation steps

For the compote: Rinse chile, cut in half lengthwise, remove seeds ribs and finely chop. Rinse apples, peel, quarter, core and dice. Add apples, sugar, lemon juice, ginger, chile, wine and 200 ml (approximately .8 cups) of water in a pot to boil and simmer for about 10 minutes over medium heat.

Rinse vegetables, peel and cut into fine strips. Blanch in boiling salted water for 1 minute, drain, rinse with cold water and drain again.

For the pork: Rinse meat, pat dry and place on a hot grill or in a hot grill pan. Cook each side for 2-3 minutes. Sprinkle with hoisin sauce.

Heat oil in another pan, add vegetables, season with salt and pepper. Add mint and cilantro to compote. Plate pork and vegetables, drizzle with compote and serve.
