For the salad
3 Tbsps apple cider vinegar
4 Tbsps cold pressed olive oil
½ tsp medium hot Mustard
4 Tbsps fresh squeezed Orange juice
salt
freshly ground pepper
1 Endive
1 small Radicchio
1 small Endive
100 grams lamb's lettuce
2 Tbsps Pine nuts
2 Tbsps scallions
For the mushrooms
1 Tbsp cold pressed olive oil
1 Tbsp lemon juice
6 finely chopped Sage
200 grams button Mushroom
salt
freshly ground pepper

Preparation steps

For the salad: whisk vinegar with oil, mustard, orange juice, salt and pepper. Rinse lettuces and pat dry well.

For the mushrooms: mix oil with lemon juice and sage for the marinade. Rinse mushrooms well, pat dry and slice into ½ cm (about 1/4-inch) thick pieces. Brush with a little marinade. Place mushrooms on a grill or grill pan and heat for 1 minute on each side. Season with salt and pepper.

Chop chicory, radicchio and endive into bite-size pieces. Toss all lettuces with dressing and transfer to plates. Top with mushrooms. Sprinkle with pine nuts and chives and serve.
