Preparation steps

1.

Rinse tomatoes and cut a lid from each. Remove tomato seeds with a spoon and season with salt and pepper.

Cut mozzarella into cubes and mix with pesto in a bowl. Fill tomatoes with mozzarella mixture and cover with tomato lid. Wrap tomatoes in aluminum foil. Cook tomatoes under a preheated oven broiler, watching carefully, for 4-6 minutes, or on a medium-hot grill. Serve hot.
