1 shallot
20 grams ginger
6 Tbsps olive oil
4 small, bone-in Leg of lamb (about 350 grams or about 12 oz)

Preparation steps

Rinse the parsley and cilantro, shake dry, remove the leaves from the stems and finely chop. Peel the garlic cloves and ginger and finely chop. Mix everything with the olive oil, cover and refrigerate for at least 1 hour.

Preheat the convection oven to 180°C (approximately 350°F).

Rinse the leg of lamb, pat dry and season with pepper. Sprinkle with a little of the olive oil from the marinade and place in a roasting pan. Bake in the preheated oven for about 30 minutes. After 30 minutes, brush the leg of lamb with the remaining marinade and the herbs and cook for 5-10 minutes longer. Remove from the oven, season with salt and serve on hot plates. Excellent with couscous and vegetables.
