- 8 leaves Lettuce
- 4 Tomatoes
- 6 Tbsps White vinegar
- 1 tsp Mustard
- ½ tsp sugar
- olive oil
- 2 Eggplant (each about 300 grams)
- salt
- freshly ground peppers
- Lemon peel (for garnish)
- 100 grams Feta
- freshly chopped Basil (for sprinkling)

Preparation steps

Rinse and spin dry lettuce leaves, tear into smaller pieces if needed. Rinse tomatoes and remove stems, quarter. Combine vinegar with mustard, 4-5 tablespoons of oil and season with sugar, a little salt and pepper. Whisk well.
2.
Cut eggplants lengthwise into thin slices, brush with a little olive oil, season with salt and pepper and grill on meduim hot grill for 2-3 minutes per side.

Arrange eggplant slices with lettuce, tomatoes and lemon slices on plates or one large plate and drizzle with salad dressing. Crumble feta cheese and sprinkle over eggplants. Sprinkle with basil and serve.
