- ¼ cup good-quality olive oil
- coarse Sea salt (to taste)
- ¼ tsp cayenne pepper
- freshly ground Black pepper
- 1 medium Eggplant (rinsed; trimmed and cut int 3/4-inch rounds)
- 2 ripe Tomatoes (rinsed; trimmed and thickly sliced)
- 8 slices cooked Bacon
- rustic Bread (cut into 4 rounds)
- freshly shaved Parmesan (to garnish)

Preparation steps
1.
Preheat grill or broiler.

In a small bowl, combine olive oil, sea salt, cayenne, and black pepper and mix well with a small whisk. Generously brush the eggplant and tomato slices with the dressing.
3.
Cook the eggplant rounds on the grill, turning once with tongs, until slightly crisp and browned, about 3 to 5 minutes per side. Grill the tomato slices for about 1 minute per side. Cook the bread rounds on the grill, turning once. until lightly toasted.
4.
Assemble the sandwich by layer 2 slices of bacon, a slice of eggplant, followed by a tomato half. Drizzle with remaining dressing, season with salt and pepper and garnish with Parmesan cheese.
