Ingredients

For the vegetables
2Bell pepper
4Tomatoes cut in half crosswise
4small Zucchini trimmed
2Red Onion peeled and sliced
2Fennel bulb cut into slices
1eggplant cut into thick slices
For the marinade
250 millilitersOlive oil
50 millilitersRed wine vinegar
2 teaspoonsMustard
3 tablespoonsThyme leaves
3 tablespoonsOregano
Salt
freshly ground black Pepper
Chili powder

Directions

1 For the marinade: Mix all ingredients together. Add the vegetables, cover and marinate for 30-40 minutes.
2 Preheat the grill. Slowly grill the vegetables until golden brown on both sides.
3 The peppers may need a longer cooking time.
4 Serve with baguette and barbecue sauce, if desired.
