- 150 grams Lettuce (such as lollo rosso, batavia)
- ½ chicken (fully cooked)
- 2 Tbsps White vinegar
- 2 Tbsps lemon juice
- 1 tsp (medium heat) Mustard
- salt
- peppers (freshly ground)
- ½ tsp sugar
- 4 Tbsps olive oil
- 1 (ripe) Pear
- shaved Parmesan (for sprinkling)
Preparation steps

Rinse and spin dry salad greens. Carve chicken, remove all skin and bones, and cut into bite-sized pieces. Mix vinegar, lemon juice, mustard, salt, pepper and sugar to make a vinaigrette. Add olive oil to the mix and shake well.

Rinse and cut pear into bite-sized peices, removing all the seeds. Place chicken and pear pieces on salad greens. Drizzle with the vinaigrette. Sprinkle with Parmesan cheese and serve.
