- 6 button Mushroom
- 1 Beefsteak tomato
- 2 scallions
- 4 Tbsps olive oil
- 2 tsps Mustard seed
- 3 Tbsps White vinegar
- 2 Tbsps Vegetable broth
- salt

- 600 grams green Beans
- 2 Tbsps chopped Shelled pistachio
- 2 Tbsps Savory leaf
- Chives (with flowers; for garnish)

Preparation steps

Rinse the mushrooms, wipe with a paper towel and cut into small slices.

Rinse the tomatoes into quarters, remove the seeds and dice the flesh into small pieces. Rinse, trim and cut scallions into thin rings. In a pan, heat the oil, saute the scallion and add the mustard seed. Sauté briefly, deglaze with the vinegar and the broth, season with salt and pepper to taste and remove from heat.

Rinse the green beans, dry, and cut the ends. Blanch the green beans in boiling salted water for about 8 minutes, rinse and drain well. Halve the green beans if desired, mix with mushrooms and diced tomatoes, arrange on plates and drizzle with the vinaigrette. Sprinkle with chopped pistachios and savory leaf and serve garnished with chives.
