1 Leg of lamb (about 1.5 kg) (approximately 3 pounds) (boneless)
6 garlic cloves
2 lemons (juiced)
salt
freshly ground peppers
1 kilogram waxy potatoes
4 carrots
4 Tomatoes
2 onions
olive oil
2 sprigs rosemary

Preparation steps

Preheat the oven to 160°C (approximately 325°F).

Rinse the lamb, pat dry and trim. Peel the garlic and cut into thin matchsticks. Cut slits into the meat and fill with garlic. Drizzle the lemon juice over the meat and season with salt and pepper. Peel, rinse and quarter the potatoes lengthwise. Peel the carrots and cut into chunks. Rinse the tomatoes and cut into quarters. Peel the onions and cut into wedges. Arrange the rosemary sprigs and vegetables (except tomatoes) in an oiled roasting pan and place the lamb over top. Drizzle with olive oil and roast for about 30 minutes. Add the tomatoes and roast for another 1 hour 30 minutes, basting occasionally. Season with salt and pepper and serve.
