1 cup cherry Tomatoes (rinsed and trimmed)
1 small Red onion (peeled and cut into thin rings)
1 seedless Cucumber (peeled and cut into bite-size pieces)
1 red Bell pepper (rinsed; trimmed and chopped)
1 handful Romaine lettuce (generous)
2 Tbsps thyme
2 Tbsps fresh Chives
1 ½ cups greek Feta (cubed)
½ cup pitted Kalamata Olive
¼ cup good-quality olive oil
3 Tbsps Red wine vinegar
½ tsp dried oregano
salt (to taste)
freshly ground Black pepper (to taste)
crusty Bread to serve (optional)
