seedless Cucumber (peeled and cut into bite-size pieces)

red Bell pepper (rinsed; trimmed and chopped)
1 handful
Romaine lettuce (generous)
2 tablespoons

fresh Chives
1 ½ cups
greek Feta cheese (cubed)
½ cup
¼ cup
good-quality olive oil
3 tablespoons
½ teaspoon
dried oregano
salt (to taste)
freshly ground Black pepper (to taste)
crusty Bread to serve (optional)

Preparation steps

1.
Combine vegetables, thyme, chives, feta and olives in a large bowl. In a small bowl, combine oil, vinegar, oregano, salt and pepper, whisking to blend. Pour dressing over salad. Toss well and serve with crusty bread, if desired.
