250 grams cooked fresh Peas (or TK - thawed)
1 egg
1 egg yolk
3 Tbsps Pastry flour
3 Tbsps Crème fraiche
50 grams butter
butter (to saute)
salt
freshly ground pepper
per 350 grams broccoli florets and Cauliflower
125 grams Cheddar cheese (grated)
4 Tomatoes
2 Tbsps scallions
5 Tbsps olive oil

Preparation steps

1.

Cook the broccoli and cauliflower successively in a pot of boiling salted water until al dente, lift out and immediately run under cold water and drain well.

Blanch the tomatoes in a pot of boiling water for 10 seconds. Drain, peel, quarter and remove seeds and cut into small cubes. In a bowl, mix the diced tomatoes with the olive oil and chives and set aside.

In a blender, puree the peas with the egg, egg yolk, flour and sour cream until smooth and transfer to a bowl.

Heat the butter in a skillet and let brown slightly. Add the butter to the pureed peas and season with salt and pepper.

Preheat the oven to 80°C (approximately (approximately 175°F). Heat a little butter in a skillet and working in batches, drop the pea mixture by tablespoonfuls into the pan and saute until golden brown on both sides. Keep finished pea pancakes in the oven to stay warm while you prepare the remaining pancakes to make 12 pancakes.

Heat the broiler. Place the pancakes next to each other on a baking sheet and top with the broccoli and cauliflower. Sprinkle with cheese and broil until the cheese has melted, 2 - 3 minutes.

7.

Serve the pancakes with the sprouts and garnished with the tomatoes in oil.
