3 garlic cloves
4 Anchovy
4 scoops Mozzarella (each 125 grams)
12 Grape leaves (in brine)
olive oil
2 Tbsps thyme
1 Tbsp Lemon peel
freshly ground peppers
400 grams red, seedless Grape
1 Tbsp finely chopped Basil
1 Tbsp finely chopped parsley
1 tsp finely chopped rosemary

Preparation steps

Preheat the oven to 80°C (approximately 175°F).

Peel the garlic, finely chop and set half aside. Drain the anchovies and finely chop. Drain the mozzarella.

Lay 3 grape leaves slightly overlapping in a circle, put a mozzarella ball on top, drizzle with a little olive oil, sprinkle with half the garlic and all of the anchovy, and season with thyme, lemon zest and pepper. Close the packet, tie with kitchen string and cook in a hot pan with a little oil about 5 minutes. Remove, keep warm in the oven and proceed with the remaining grape leaves and mozzarella balls.

Meanwhile heat the grill.

Rinse the grapes and pat dry. Drizzle with some olive oil and barbecue on the hot grill for 3-5 minutes.

Mix the remaining garlic with the herbs and 3 tablespoons of oil and season with salt and pepper. Arrange the mozzarella parcels with the grapes on plates and serve drizzled with herb oil.
