110 milk
1 tsp lemon juice
2 tsps ground Chia seeds
2 Tbsps boiling water
1.333 cups Quinoa flake (plus extra for sprinkling)
1 cup Brown rice flour (plus extra for sprinkling)
0.333 cup sugar
½ cup Almond flour
0.333 cup Tapioca flour
1 Tbsp gluten-free Baking powder
½ tsp salt
cup unsalted butter
1 egg (beaten)
4 ozs Strawberries (chopped)
To glaze
1 egg (beaten)

Preparation steps

1.
Whisk together the milk and lemon juice.
2.
Whisk together the chia seeds and boiling water until gel-like, then leave to cool.
3.
Stir together the dry ingredients in a mixing bowl. Rub in the butter until the mixture resembles breadcrumbs.
4.
Mix together the milk, egg, and chia seed gel. Add to the dry ingredients, mixing until a dough starts to form.
5.
Add the strawberries and knead a few times until the dough comes together.
6.
Turn out onto a surface dusted with brown rice flour. Knead until it comes together, then press into a rectangle about 2.5cm|1" thick.
7.
Cut out rounds and place on a baking tray lined with non-stick baking paper. Re-roll the trimmings to cut out more rounds. Chill for 20 minutes.
8.
Heat the oven to 200ºC (180º fan) 400ºF gas 6.
9.
Brush the tops with beaten egg wash and sprinkle quinoa flakes on top. Bake for 20 minutes, until golden. Cool on the baking tray for 5 minutes, then place on a wire rack to cool completely.
