- olive oil (extra virgin)
- 4 cups Squid (cut into rings, leave tentacles whole)
- 1 garlic clove (finely chopped)
- 1 red pepper (finely chopped)
- 3 Tbsps lemon juice
- 1 Tbsp lemon zest
- 14 ozs Tagliatelle
- fennel fronds (chopped)

Preparation steps
1.
Heat 4 tbsp olive oil in a pan and fry the squid on a medium heat. Add the garlic and pepper and fry for a few more minutes. Add the lemon juice and zest and season with salt and ground black pepper. Set aside.
2.
Cook the tagliatelle in plenty of salted, boiling water and drain. Set aside some of the water. Add the pasta to the pan and mix well.
3.
Add 2-3 tbsp of the reserved cooking water, season to taste and stir in the fennel leaves. Serve immediately. Goes well with a small fennel and orange salad.
