- 9 ozs smoked duck legs
- 1 Chives (finely chopped)
- 3 onions (finely sliced)
- 5 Tbsps sunflower oil
- 2 Tbsps Wine vinegar
- salt

Preparation steps
1.
Peel the potatoes and cook for 20 minutes in boiling salted water. Drain and leave to cool. Dice into small cubes and transfer to a salad bowl.
2.
Remove any fat from the slices of duck and add them to the potatoes.
3.
Add the chives and onion to the salad.
4.
Whisk the oil and vinegar together with some salt and pepper. Pour the vinaigrette over the salad, toss well and serve immediately.
