1 Goose breast (approx 1 kg)
4 sprigs thyme
1 cup Whiskey
2 tablespoons runny honey
1 teaspoon cinnamon
2 onions
2 carrots
1 piece Celeriac (approx. 150 g)
1 Parsnip
1 tablespoon rapeseed oil
salt
freshly ground peppers
2 cups vegetable stock

Preparation steps

1.
Wash the goose breast and pat dry. Wash the thyme, shake dry and place in a roasting tin. Pour in the whiskey and honey, add the cinnamon and stir. Place the goose breast side down into the roasting tin and marinate for approx. 12 hours.

Heat the oven to 180°C (160° fan) | 350F | gas 4.

Peel and dice the onions. Clean, wash and chop the vegetables. Heat the oil in a frying pan and gently brown the vegetables and onion. Place in the roasting tin with the goose breast and season with salt and pepper. Pour in the vegetable stock and roast in the oven for 2 hours.

Remove from the oven and turn the goose breast side up. Add a little stock if required. Place in the oven and roast for 30 minutes until crisp on top. Do not cover.
5.
Serve with red lentils and sugar snaps.
