- For the blinis
- 1 cup all-purpose flour (scant)
- 1 cup Buckwheat flour (scant)
- ½ oz Yeast
- 1 ⅛ cups lukewarm milk
- 2 Tbsps melted butter
- 2 eggs (separated)
- 1 pinch salt
- 4 Tbsps sunflower oil (for frying)
- For the topping
- 1 cup cream cheese (heaped)
- 7 ozs smoked Salmon (thinly sliced)
- 2 ozs Lumpfish caviar
- To garnish
- Onion sprouts

Preparation steps
1.
Mix the flour and buckwheat flour in a mixing bowl.

Dissolve the yeast in the lukewarm milk and stir into the flour with the melted butter, egg yolks and salt. If the batter is too runny, add a little flour. If it is too thick, add a little more milk. Cover and allow to rest in a warm place for 20 minutes.

Whisk the egg whites until stiff and gently fold into the batter.

Heat the oil in a frying pan. Drop tablespoons of the batter into the frying pan and cook the blinis on both sides for 1-2 minutes until golden brown. Remove from the pan and drain on absorbent kitchen paper. Repeat the process until all the batter has been used. Layering the blini with non-stick baking paper and keep warm in a low oven until required.

Spoon cream cheese onto the blinis and top with slices of salmon. Place about 1/2 teaspoon of caviar on top. Garnish with onion sprouts.
