- 5.333 cups waxy potatoes
- ⅜ cup vegetable stock
- 6 Tbsps white wine vinegar
- 4 Tomatoes (cut into wedges)
- 1 Red onion (sliced)
- ⅔ cup black Olives (pitted)
- 2 Tbsps Caper
- 4 Tbsps olive oil
- 4 eggs (hard boiled and cut into quarters)

1 Fluted tart pan, 1 Bowl, 1 Tablespoon, 1 Teaspoon, 1 Fine-mesh sieve, 1 Whisk, 1 Hand mixer, 1 Parchment paper, 1 Metal bowl, 1 Citrus juicer
Preparation steps

Steam or boil the potatoes in their skins until tender. Leave to cool slightly, then peel and cut into large cubes.

Warm the vegetable stock with the vinegar and pour over the potatoes. Add the onion, tomatoes, olives and capers and mix.
3.
Carefully mix in the oil, season with salt and pepper and scatter over the egg. Leave to stand for at least 30 minutes before serving.
