6 fully ripe Beefsteak tomato
½ Watermelon
Sea salt
freshly ground peppers
4 Tbsps balsamic vinegar
1 ½ tsps Coriander
6 small, green chili peppers (optional)

TIPS AND VARIATIONS: if you don’t like crunching on the coriander seeds, crush them using a mortar and pestle or in a shallow dish using the back of a spoon; or place them in a pepper mill. Alternatively, replace them with ½ teaspoon of ground coriander.

Preparation steps

1.
Immerse the tomatoes for 10 seconds in a pan of boiling water and then refresh them in cold water. Peel them and remove the pips and place them in a mixing bowl.

Scoop out the flesh of the watermelon, removing the pips and skin. Cut into cubes and add to the mixing bowl. Season with sea salt and ground pepper and add the balsamic vinegar.
3.
Using an electric mixer, mix in short bursts for as short a time as possible.
4.
Pour into a container, add the coriander seeds and the whole, washed chilli peppers. Cover and refrigerate for 2 hours. Serve chilled with or without the chilli peppers.
