- 2 large ripe Pear
- 4 Tbsps Danish Blue cheese
- 4 Tbsps Walnut
- salt
- freshly ground peppers
- 1 slice Whole grain cracker
- 4 leaves Iceberg lettuce
- 4 leaves Lollo rossa
- 1 Tbsp lemon juice
- 4 Tbsps extra virgin olive oil
- 8 slices Ciabatta (toasted if you'd like)

Preparation steps

Preheat the oven to 200°C (approximately 400°F). Peel the pears, halve lengthwise, and remove the core. Place the pear halves, cut side up on a baking sheet.

Crumble the cheese and mix with the walnuts. Season to taste with salt and pepper. Pipe 1 tablespoon of the mixture in each pear half. Crumble the cracker over the pears, and bake in the oven for 10 minutes until golden brown.
3.
Rinse, trim, and dry the iceberg lettuce and the lollo rosso. Mix both lettuces, and transfer to plates. Drizzle with the lemon juice and oil, and top with one of the pear halves. Serve with the ciabatta.
