Good Luck Summer Rolls
Place the rice paper between damp kitchen towels to soften.
Peel the carrots and cut into thin, wide strips.
Rinse and spin dry salad.
Halve the pepper lengthwise, remove the seeds and white ribs and cut into thin strips.
In a bowl, whisk together the vinegar, oil, salt and pepper.
Working with one sheet of rice paper at a time, place 1-2 lettuce leaves on a sheet of rice paper, cover with a few carrots and peppers, drizzle with the vinegar and oil mixture and fold the top and bottom over the filling and gently roll up. Cut each in half cutting on the diagonal. Arrange standing up on plates, and fill with sprouts and chives.
