Golden Spiced Tuna Steak
Place the tuna steaks in a hollow dish. Mix the oil, vinegar, all the spices and sugar in a bowl.
Pour the mixture over the tuna.
Turn the steaks over several times in the sauce, then set aside in a cool place for 30 minutes.
Heat frying pan with a dash of oil. Drain the tuna steaks and sear them for 2 to 3 minutes on either side. The flesh must remain red in the middle.
Remove the steaks from the pan, add the marinade and reduce.
Place the steaks on plates, pour over the sauce and serve with a mesclun salad.
