400 grams Goat cheese (roll)
4 Tbsps apple cider vinegar (or white vinegar)
1 tsp liquid honey
2 Tbsps lemon juice
5 Tbsps Canola oil
1 pinch Red pepper flakes
freshly ground peppers

Preparation steps

1.

Rinse the beets thoroughly and cut or slice thinly, about 2-3 mm (approximately 1/10 inch).

Preheat the broiler.

Cut the cheese into 20 slices 4-5 mm thin (approximately 1/6 inch) and place on a parchment-lined baking sheet. Lightly brown on both sides under the broiler.

For the dressing, mix the vinegar with the honey, lemon juice, oil, 2-3 tablespoons of cold water, chilli flakes, salt and pepper in a glass. Tightly closed, shake well, then season to taste.

5.

Alternately pile the cheese on a plate with the beet slices and drizzle with the dressing. Serve garnished with basil.
