1 pc Parmesan (approximately 1 oz)
1 egg
7 ozs Pastry flour (with some extra for the work surface)
Nutmeg
3 Tbsps butter

Preparation steps

1.

Rinse the potatoes and boil in salted water for about 30 minutes. Drain, and peel the potatoes and squeeze through a ricer. Set aside to cool and dry.

2.

Meanwhile, rinse the sage, shake dry and remove the leaves. Shave the Parmesan cheese finely.

3.

Add the egg and flour to the potatoes and season with salt and freshly grated nutmeg. Knead to form a smooth dough.

4.

Roll the potato dough on a floured surface into finger-thick rope shapes and cut into 1/2 inch wide pieces. Roll the pieces on the back of a fork and rest for about 10 minutes, covered with a kitchen towel.

5.

Simmer the gnocchi in salted water until they float to the surface (about 4 minutes).

6.

Meanwhile, heat butter in a pan and sauté sage over medium heat for 30 seconds.

7.

Remove the gnocchi from the water with a slotted spoon, add to the pan and swirl in the butter. To serve, season with salt and pepper, place on a large plate and sprinkle with Parmesan.
