800 grams starchy potatoes
120 grams Pastry flour
40 grams Parmesan (freshly grated)
2 eggs
salt

Nutmeg

Preparation steps

1.

Peel potatoes, cook and press through a potato ricer while still hot. Mix potatoes in a bowl with flour, Parmesan and eggs and season with salt, pepper and nutmeg. Knead potato mixture to form a dough.

Roll potato mixture into finger thick logs and cut into 3 cm (approximately 1 inch) wide pieces. Gently press grooves into each piece with a fork. Heat plenty of salted water in a pot until simmering (it should not boil), add gnocchi and leave until they float to the surface.

3.

Melt butter in a deep pan, add sage leaves, lightly fry, add well-drained gnocchi and toss briefly in butter sauce. Serve with Parmesan.
