Ingredients

6
Ingredients
1 cup unsalted butter (scant)
½ cup superfine caster sugar
2 large egg yolks
2 tsps vanilla extract
3 cups gluten-free all purpose flour (plus extra for dusting)
2 tsps xanthan gum (if not included in the flour)
For the icing
1 cup powdered sugar
½ Tbsp lemon juice
water
To decorate
gold edible leaf
powdered sugar

Preparation steps

1.
Heat the oven to 180°C (160° fan) 350°F gas 4. Line 2 large baking trays with non-stick baking paper.
2.
Beat the butter until soft. Add the sugar and beat until smooth, then beat in the egg yolks and vanilla.
3.
Gradually add the flour and mix to a stiff dough. Flatten the dough into a disc, wrap in cling film and chill for 1 hour.
4.
Roll out the dough on a lightly floured surface, about 5mm|1/4" thick.
5.
Cut out 1 round of dough for the base and stars using star-shaped cookie cutters in graduated sizes; the smallest cutter should be about 4cm|1 1/2"and the largest about 10cm|4".
6.
Place the round and the stars on the baking trays and bake for 10-15 minutes until golden. Cool on the baking trays for a few minutes, then place on a wire rack to cool completely.
7.
For the icing: sift the royal icing sugar into a bowl. Beat in the lemon juice until smooth. Add just enough water to give a coating consistency, beating well until thick and smooth.
8.
Place the round on a serving plate. Place the largest star on top, securing with a dab of icing and pressing down slightly so the icing holds them together. Repeat with the remaining stars in order of size, finishing with the smallest stars at the top. Place a piece of gold leaf on the top of the tower.
9.
Sift icing sugar over the tower.
